What: Greek Yogurt Chicken Salad

Taste: Creamy, savory, and toasty— this healthy Greek Yogurt Chicken Salad is a protein packed dish that tastes pretty damn similar to a Classic Chicken Salad with Mayo, but without the fat. It’s healthy, sugar-free, and protein packed. The roasted almonds give it a great crunch, and reminds me of Ritz crackers. The dijon mustard gives it a good kick. The onions add in a great texture and taste. Pair it with some toast or some salad, you will feel happy and filled!

How It’s Made: Mix all ingredients in a bowl. That’s it. I actually eat half of what the recipe calls for. That’s enough for me, personally.

What to Serve it With: Toast— make it into a sandwich with a layer of spinach. Or, top off your favorite salad with this chicken salad. A classic lemon and olive oil salad would pair beautifully with this.

Notes & Tips: Have leftover rotisserie chicken? Saran-wrap it, and freeze it in small serving size portions. This is the BEST tip I learned from my Mom. Learn how to freeze rotisserie chicken.

Ingredients:

  • ¾ cup rotisserie chicken, shredded, lightly packed (80g)
  • 2 Tbsp onion, chopped (20g)*
  • 12 almonds, roasted (12g)
  • 2 Tbsp plain Greek yogurt (fat content does not matter) (40g)
  • 1 Tbsp dijon mustard (16g)
  • Salt & Pepper
  • Lemon wedge
  • Celery, chopped (optional)
  • Grapes, halved (optional)
  • Pecans or walnuts, roasted (optional)
  • Dill weed, for garnish (optional)

Instructions:

How to cook Greek Yogurt Chicken Salad

  1. Add all ingredients to a small bowl. Season with small increments of salt, as rotisserie chicken is already seasoned. Add in black pepper. Mix it up. Adjust seasoning to taste.
  2. Drizzle fresh lemon on top and some dill weed (optional). Serve on toast, Ritz crackers, your favorite salad— whatever you desire.

Notes:

*Any type of onion is fine. Red onion tastes best, but brown onion is fine along with others.

This is quite honestly a great recipe. My friends who are not really into Greek Yogurt used in a savory meal tried this and were amazed with jut how good it was. They make it every week now, hah! It’s the perfect post-workout meal too. Definitely give it try especially if you love chicken salad with mayo!
